Although you may think it is just a cake – your wedding cake will, in fact, be the centre piece of your wedding reception. The eyes of all your guests will automatically rivet to the layers of cream, frosting and sugar with which you will cap the evening by cutting for all to share. So, when you are choosing your wedding cake, you have to make sure that it not only matches the style and theme of your wedding and reception, but that it is a proper reflection of you as a couple. Cake Taste
Wedding cakes can come in a multitude of flavors. In the past, necessity dictated that the wedding cake be made with fruits and brandy – very similar to a Christmas cake. The fruit cake was an ideal wedding cake as it kept for a long time and the ingredients made it a rich and expensive offering that could not be indulged in every day. Today, all that has changed. As our tastes have evolved the traditional wedding fruit cake has taken a back seat to the more flavorsome and delicate tastes now available. From plain vanilla to chocolate to coconut, almond and even pineapple – the flavor you choose for your wedding cake can be as unique as your relationship. Many people end up choosing a white or Angel cake with vanilla icing as it is not as sweet as some other choices and will please most palates. No matter what your choice just make sure that it your cake is large enough to go around with some left over for you to freeze for your first anniversary. 

An important consideration when choosing your wedding cake is the icing. Since the cake will have to sit in the hall for several hours before it is cut, make sure that the icing will retain its flavor. There is nothing worse than going through all the trouble of ordering a fabulous cake only to have the icing lose its flavor or consistency before it is ready to be eaten. A good way to ensure that your cake will stand the test of time is to have a mini replica of your cake made and to let it sit for a while to see how it then looks and tastes. This will give you a good indication of several things including the competency of your baker, the hardiness or your cake and the way it will taste when it is finally served. 

Cake Style
The style of your wedding cake is a very personal thing. The style you choose will automatically reflect you as a couple. Traditionally wedding cakes were multi-tiered and topped by a miniature bride and groom. Nowadays wedding cakes can be elaborate confections of delicate lace icing or very simple forms covered my minimalist decorations and elegant icing. Looking through wedding planning magazines and even flipping through a baker’s look-book will give you hundreds of fabulous ideas for creating your dream cake
